crust is kind of dark but i would want to see the bottom,looks good though

Sorry, that pie bears absolutely no resemblance to authentic New Haven pizza. Doesn’t mean it’s not good. It’s just different. I think the top crust looks OK but like Doris said I would have to see the bottom. If it’s charcoal black no good.

I figured I might be on the lunatic fringe. I certainly wouldn't send it back, but I'd have to be really hungry to eat the outer ring of crust.

I think they put all their energy into browning the crust without any attention to the basil. The leaves look like they were added after the pie was out of the oven and sliced.

With our New Haven Pizza, the entire crust is so good we break open the outer crust pieces and sprinkle on some Romano cheese or even dip into sauce. If it’s time for desert, cover the outer pieces with cinnamon and sugar and have with coffee or tea. Nothing goes to waste up here. 🙂

Here’s a photo of a good Frank Pepes pizza. World famous now. Note how the cheese has made brown bubbles. A little black here and there on the outer crust. That’s ok. It won’t be black underneath. Their original location is just 7 miles from me and Mohegan Sun has a Pepe's up there too. If the cheese on your pizza just stays pale yellow and or slides off intact, “ Forget about it “

I like it, but if they allow customization I would just ask them to pull it from the oven 10 minutes earlier :up:.

Incidentally, the photo I posted is from Sapori Italian Kitchen at Harrah's Tahoe. Not mine, it's from another forum (an inferior one).

It’s all what you like. With Pepes, you just have to ask them for a “ lite bake “ Their ovens are so hot, it’s hard not to get a burnt spot here and there. They also have to keep turning them in the ovens. If they are too busy to do that, you can get over done areas too. I actually prefer Modern Pizza in New Haven over Pepes. Just don’t get there that often. The parking is bad and not in the best area. I think Modern has more rewards for the best pies. Not sure though. Hanging in any of the major cities in Ct is not safe anymore. I best stay away from that subject here. Tech will know what I mean.
