my question is this, will the way you play a hand on any type of video poker slot change due to pay table ?. Would you still play the hand the same way no matter what the pay table was.

The pay table defines how hands are played. There will be strategy changes any time you see variations in the pay tables. For example, a game with a progressive jackpot will see continual changes as the jackpot increases.
 
Now, this doesn't mean the changes will be significant. But, there will be changes.
