The return of muli-play games is the same as single line for the equivalent paytable. You have hit on the main difference, variance, since all hands are based on a single dealt hand. In other words, you wll experience more ups and downs and it will take more total hands for your return to converge on the expected return. However, since you can play so many more hands in a given time period it will take less total time to converge.
