Pay table means everything on this one.
If you are playing a game where 5 of a kind pays 75, the "correct" hold is indeed as you describe. But it's very very close. I would probably go for the deuces if I was a short term gambler, 5 of a kind long-term.
If you are playing NSUD where 5 of a kind pays 80, you want to hold the 5 of a kind in both cases for the correct hold. But I might struggle not going for the 2's.

If playing DWB 5 Jacks are worth 100 as is 5,6s. Too much to give up for a shot at the 2s.
Straight Deuces as in your example, my decision would probably be based on my current bankroll. We are, after all, gamblers. (except for SM)

DW: 5 J's returns 75.00, 3 2's returns 74.73 for the same hand thus the 5 J's is the correct hold. 5 6's returns 75.00 but 3 2's returns 75.323 for the same hand thus the trip 2's is the correct hold. DWB: 5 J's returns 100.00 while 3 2's returns 79.53 thus the 5 OAK is the correct hold. 5 6's returns 100.00 while 3 2's returns 80.12 for the same hand thus, the 5 OAK is once again, the correct hold.
